Despite this export potential nutritional value and technological properties of some local varieties of beans have been insufficiently studied yet. In this paper, such geometric figures as length, width, thickness, the arithmetic mean diameter, the geometric average diameter, sphericity, surface area and aspect ratio of beans before and after hydrothermal treatment have been defined. These data play an important role in the production of food from beans, determine the ways of transportation and are taken into account when describing their quality.
