Summary:In this study antimicrobial efficiency of edible films prepared with chitosan solution and chitosan solutions enriched with essential oils against Listeria monocytogenes were evaluated on real food matrix. Oregano and clove oil were added to edible film solutions at %0,5 and %1. Kashar cheese slices used as food matrix were contaminated with L. monocytogenes at 5 Log cfu/g. Artificially contaminated cheese samples were wrapped with preperad films and stored at 4°C for 14 days. Antimicrobial effectiveness of films against L. monocytogenes were evaluated by counts periormed on 1,7 and 14 days of storage period. At the end of storage period antimicrobial effectiveness of all film types against L. monocytogenes were determined as significant (P<0,05). Application of edible films to samples were resulted 1,18 to 2,39 Log reduction in count of L. monocytogenes. Generally oregano oil added films were showed greater antimicrobial effect on L. monocytogenes than clove oil added films.
