云南主栽核桃品种仁及其油脂中功能组分分析Analysis of functional components in kernels and oil of major walnut cultivars in Yunnan
为开发利用云南核桃资源,对云南8个主栽核桃品种仁中神经递质类成分(色氨酸、5-羟基色氨酸、5-羟色胺、褪黑素)、油脂中脂肪酸及内源性抗氧化成分(β-胡萝卜素、角鲨烯、β-谷甾醇和生育酚)含量进行测定,采用主成分分析对8个主栽核桃品种进行相似性评价。结果表明:云南8个主栽核桃品种仁中色氨酸、5-羟基色氨酸、5-羟色胺、褪黑素含量分别为(0.02±0.00)~(008±0.01)mg/g、(11.40±0.83)~(38.84±1.38)μg/g、(2.99±0.62)~(12.31±1.01)mg/g、(3.95±0.55)~(19.00±1.47)ng/g;8个品种核桃油中不饱和脂肪酸含量为...
