THE EFFECT OF CONVENTIONAL AND SHOCK FREEZING ON DRIP LOSS AND TEXTURAL PARAMETERS OF BEEF MEAT
Abstract The effect of conventional and shock freezing on thaw drip loss and firmness of beef meat was studied.
